-> Some less known ingredients:
– Malanga (also known as eddo or cocoyam) is a root vegetable. The fritters are made by grating it, mixing with eggs and frying it.
– Tasajo is a cured, dry beef cut that it is desalted in water prior to cook until tender. Then it’s shredded and cooked with traditional Cuban sofrito.
– Sofrito is the Cuban flavour base for most dishes consisting in sautéing garlic, onions and peppers in olive oil.
– Yam is a starchy root vegetable that it is boiled and drizzled with the Cuban garlicky sauce called mojo.
– Mojo is a classic Cuban sauce that it is drizzled over most meats, root vegetables and other dishes.
– Malta is a non-alcoholic, lightly carbonated malt beverage made from barley, hops and water. very popular in West Africa and the Caribbean countries including Cuba of course.
