– Mojo (pronounced moh-ho) is a sauce made with crushed garlic, sautéed in hot oil and mixed with citrus juice. This tangy and garlicky sauce is one of the basics of Cuban cuisine and mixes the heritage of the African and Spanish cook. It is used to marinade meats, and to pour over cooked vegetables and meat.
– Plantain is a fruit similar to bananas, but it is more starchy and can only be consumed after cooked. Unripe plantains, which are savoury, can be sliced and fried to make tostones, mariquitas and other dishes. Ripe plantains are sweet and are commonly fried, making for a delicious caramelised side dish to any savoury Cuban meal.
– Yuca or cassava is a delicious root vegetable that can only be consumed after cooked. It is boiled until tender, chilled, and then cut into stick and fried for a crispy outer and inner soft core.
